Ingredients:
Prepare Puri:
- Maida (All-purpose flour) sifted 2 Cups
- Atta (Wheat flour) sifted 1 Cup
- Sooji (Semolina) ¼ Cup
- Namak (Salt) 1 tsp
- Ghee 2 tbs
- Lukewarm water 1 & ½ Cup or as required
- Cooking oil for frying
Prepare Badami Kheer:
- Badam (Almonds) ¼ Cup
- Chawal (Rice) tota 1 Cup (soaked for 2 hours)
- Water 4 Cups or as required
- Sugar ½ Cup or to taste
- Elaichi powder (Cardamom powder) ½ tsp
- Dry milk powder 1 & ¼ Cup
- Lukewarm water 1 Cup or as required
- Kewra water 1 tsp
- Kishmish (Raisins) 1 tbs
- Badam (Almonds)
- Badam & Pista (Almonds & Pistachios) sliced
- Chandi warq (Edible silver leaves)
- Cooking oil 1-2 tbs
Directions:
Prepare Puri:
In a bowl,add all-purpose flour,wheat flour,semolina,salt & mix well.
Add ghee & mix well until it crumbles.
Gradually add lukewarm water & knead until dough is formed.
Grease dough with ghee,cover & let it rest for 25-30 minutes.
Knead dough again until smooth.
Add cooking oil & knead dough again.
Take a small dough (70g),make a ball & roll out with the help of rolling pin.
Press gently the sides of rolled dough with the help hand (makes 10-12).
In a wok,add cooking oil & fry puri on medium flame until golden & crispy (gently press puri down to puff up).
Prepare Badami Kheer:
In spice mixer,add almonds,grind well & set aside.
In a wok,add soaked rice,water,mix well & cook on medium flame for 12-15 minutes & mash rice well until desired consistency.
Add ground almonds,sugar,cardamom powder & mix well.
Add dry milk powder & mix well.
Add lukewarm water and mix well.
Add kewra water,mix well and cook until desired consistency (2-3 minutes).
Add raisins and mix well.
In a serving bowl,add prepared kheer,garnish with almonds,edible silver leaves,almonds & pistachio.
Refrigerate until chilled.
Serve puri with badami kheer.

Ghee dal dein aur crumble hunay tak ache tarhan mix ker lein.
Thora thora ker ka neem garam pani dal dein aur dhond ker dough tayyar ker lein.
Dough ko ghee sa grease karein aur dhak ker 25-30 minutes kliya rakh dein.
Dough ko smooth hunay tak dubara ghond lein.
Cooking oil dal ker dubara dhond lein.
Chota dough (70g) lein aur ball bana lein aur rolling pin ki madad sa bail lein.
Rolled dough ki sides ko haath ki madad sa gently press ker lein (makes 10-12).
Karahi mein cooking oil garam karein aur darmiyani ancch per golden & crispy hunay tak fry ker lein aur frying kertay hoye gently press kertay rahein tak puri phool jaye.
Prepare Badami Kheer:
Spice mixer mein badam dal ker ache tarhan grind ker lein & side per rakh dein.
Karahi mein soaked chawal aur pani dal ker ache tarhan mix karein aur darmiyani ancch per 12-15 minutes kliya paka lein aur desired consistency chawal ko ache tarhan mash ker lein.
Garam pani dal ker ache tarhan mix karein aur halki ancch per 15-16 minutes kliya paka lein aur mash ki madad sa musalsal mash ker ka thick paste tayyar ker lein.
Ground badam,cheeni aur elaichi powder dal ker ache tarhan mix ker lein.
Dry milk powder dal ker ache tarhan mix ker lein.
Neem garam pani dal ker ache tarhan mix karein.
Kewra water dal ker ache tarhan mix karein aur desired consistency anay tak paka lein (2-3 minutes).
Kishmish dal ker ache tarhan mix karein.
Serving bowl mein tayyar kheer dal dein,badam,chandi warq,badam aur pista sa garnish ker lein.
Thanda ker ka serve karein.
Puri ko Badami kheer ka saath serve karein.
