Ingredients:
- Mutton boneless cubes 750g
- Kacha papita (Raw papaya) paste 1 & ½ tbs
- Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
- Namak (Salt) 1 tsp or to taste
- Water 1 Cup
- Cooking oil ¼ Cup
- Tamatar (Tomatoes) chopped 3 medium
- Hari mirch (Green chillies) sliced 6-8
- Pyaz (Onion) fried 3 tbs
- Lal mirch powder (Red chilli powder) 1 & ½ tsp or to taste
- Dhania powder (Coriander powder) ½ tbs
- Kali mirch powder (Black pepper powder) ½ tsp
- Zeera powder (Cumin powder) ½ tbs
- Garam masala powder ½ tsp
- Dahi (Yogurt) thick 1 Cup
- Water 1 Cup or as required
- Lemon juice 1 tbs
- Kasuri methi (Dried fenugreek leaves) 1 tsp
- Hari mirch (Green chilli) sliced 1-2
- Adrak (Ginger) julienne
- Hara dhania (Fresh coriander) chopped
- Lemon slices 5-6
- Pyaz (Onion) rings
Directions:
In a bowl,add mutton,raw papaya paste,ginger garlic paste,salt & mix well,cover & marinate for 4 hours.
On a griddle,add marinated mutton,water and mix well,cover & cook on low flame for 14-15 minutes then cook on high flame until dries up and move mutton pieces on one side of the griddle.
Add cooking oil,tomatoes,green chillies & mix well.
Add fried onion,red chilli powder,coriander powder,black pepper powder,cumin powder,garam masala powder & mix well.
Add yogurt,mix well & cook for 2-3 minutes.
Now mix well mutton pieces & cook for 2 minutes.
Add water and mix well,cover & cook on low flame until tender (14-15 minutes).
Add lemon juice,dried fenugreek leaves,green chilli,ginger,fresh coriander and lemon slices,cover & simmer on low flame for 2-3 minutes.
Garnish with onion rings & serve!

Directions:
Bowl mein mutton,kacha papita paste,adrak lehsan paste aur namak dal ker ache tarhan mix ker lein aur dhak ker 4 hours kliya marinate ker lein.
Tawa per marinated mutton aur pani dal ker ache tarhan mxi karein aur dhak ker halki ancch per 14-15 minutes kliya paka lein phir tez ancch per sukh janay tak paka lein aur mutton pieces ko tawa ki ek side per ker dein.
Cooking oil,tamatar aur hari mirchien dal ker ache tarhan mix karein.
Fried pyaz,lal mirch powder,dhania powder,kali mirch powder,zeera powder aur garam masala powder dal ker ache tarhan mix ker lein.
Dahi dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
Ab mutton pieces ko ache tarhan mix karein aur 2 minutes kliya paka lein.
Pani dal ker ache tarhan mix karein aur dhak ker halki ancch per gul janay tak paka lein (14-15 minutes).
Lemon juice,kasuri meethi,hari mirch,hara dhania aur lemon slices dal dein aur dhak ker halki ancch per 2-3 miuutes kliya dum per rakh dein.
Pyaz rings sa garnish ker ka serve karein!
