Ingredients:
- Boneless mutton 750g (with 10 % fat)
- Kacha papita (Raw papaya) paste 1 & ½ tbs
- Namak (Salt) 1 tsp or to taste
- Safed mirch powder (White pepper powder) ½ tsp
- Zeera powder (Cumin powder) 1 tsp
- Kali mirch powder (Black pepper powder) 1 tsp
- Garam masala powder 1 tsp
- Lal mirch powder (Red chilli powder) ½ tsp or to taste
- Dhania powder (Coriander powder) ½ tsp
- Hari mirch (Green chilli) paste ½ tbs
- Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
- Cream 2 tbs (optional)
- Dahi (Yogurt) whisked ½ Cup
- Lemon juice 1 & ½ tbs
- Nurpur Butter salted ¼ Cup (approx. 50g)

- Lehsan (Garlic) chopped 2 cloves
- Hara dhania (Fresh coriander) chopped 1 tbs
- Kashmiri lal mirch (Kashmiri red chilli) powder ¼ tsp
Directions:
In a bowl,add mutton,raw papaya paste and mix well,cover & marinate for 2 hours.
Add salt,white pepper powder,cumin powder,black pepper powder,garam masala powder,red chilli powder,coriander powder,green chilli paste,ginger garlic paste,cream,yogurt,lemon juice,butter (microwave for 30 seconds) & mix well,cover & marinated for 2 hours.
In a frying pan,add butter & let it melt.
Add garlic & sauté for a minute.
Add fresh coriander,kashmiri red chilli powder,mix well & set aside.
Thread marinated mutton on metal skewers & grill on burning charcoal until done and apply prepared herbed butter in between.
Drizzle prepared herbed butter and serve with naan,raita & salad.

Namak,safed mirch powder,zeera powder,kali mirch powder,garam masala powder,lal mirch powder, dhania powder,hari mirch paste,adrak lehsan paste,cream,dahi,lemon juice aur makhan (microwave for 30 seconds) dal ker ache tarhan mix karein aur dhak ker 2 hours kliya marinate ker dein.
Frying pan mein makhan dal ker melt ker lein.
Lehsan dal ker ek minute kliya sauté karein.
Hara dhania aur kashmiri lal mirch powder dal ker ache tarhan mix karein & side per rakh dein.
Marinated mutton ko metal skewers per laga lein aur jaltay hoye koyla per paka lein aur bech bech mein tayyar herbed makhan lagatay rahien.
Tayyar herbed butter drizzle karein,naan,raita & salad ka saath serve karein.
