Ingredients:
Prepare Aam ras:
- Aam (Mangoes) cubes 500g
- Sugar 3 tbs
- Elaichi powder (Cardamom powder) ½ tsp
- Doodh (Milk) ¼ Cup
Prepare Puri:
- Mong daal (Yellow lentil) ½ Cup (soaked for 2 hours)
- Namak (Salt) ½ tsp or to taste
- Water 2/3 Cup
- Hari mirch (Green chillies) chopped 3-4
- Hara dhania (Fresh coriander) handful
- Cooking oil 1 tbs
- Ajwain (Carom seeds) ¼ tsp
- Zeera (Cumin seeds) roasted & crushed ½ tsp
- Sabut dhania (Coriander seeds) crushed ½ tsp
- Adrak lehsan paste (Ginger garlic paste) 1 tsp
- Haldi powder (Turmeric powder) ½ tsp
- Lal mirch powder (Red chilli powder) ½ tsp or to taste
- Maida (All-purpose flour) sifted 2 & ½ Cups
- Sooji (Semolina) 1 tbs
- Namak (Salt) 1 tsp or to taste
- Ghee 2 tbs
- Water 1 Cup or as required
- Cooking oil for frying
Directions:
Prepare Aam ras:
In a blender jug,add mangoes,sugar,cardamom powder and milk,blend to make puree & refrigerate until serve.
Prepare Puri:
In a saucepan,add yellow lentil,salt,water,mix well & bring it to boil.
Remove scum,cover & cook on low flame until tender & dries up (approx. 14-15 minutes).
Let it cool.
In chopper,add boiled lentil,green chillies,fresh coriander,chop coarsely & set aside.
In a frying pan,add cooking oil,carom seeds,cumin seeds,coriander seeds & mix well.
Add ginger garlic paste,turmeric powder,red chilli powder & mix well.
Now add chopped lentil mixture and mix well,cook for a minute & set aside.
In a bowl,add all-purpose flour,semolina,salt,ghee & mix well until crumbled.
Gradually add water & knead until dough is formed,cover & let it rest for 25-30 minutes.
Grease hands with oil and knead dough again until smooth.
Take a small dough (50g),make a ball & spread with the help of hands.
Add small quantity (2 tsp) of lentil mixture in the center of the dough then gather all the edges,pinch and seal to make a ball,pinch,press gently & roll out with the help of rolling pin (makes 11-12).
In a wok,heat cooking oil & fry puri on low flame from both sides until golden & crispy while frying gently press so that it may puffs up.
Serve puris with aam ras.

Blender jug mein aam,cheeni,elaichi powder aur doodh dal dein aur ache tarhan blend ker ka puree tayyar ker lein & serve kernay tak refrigerate ker lein.
Prepare Puri:
Saucepan mein moong daal,namak aur pani dal ker ache tarhan mix karein aur ubal anay dein.
Scum ko nikal lein aur dhak ker halki ancch per daal gul janay aur sukh janay tak paka lein (approx. 14-15 minutes).
Thanda ker lein.
Chopper mein boiled daal,hari mirchein aur hara dhania dal ker coarsely chop ker lein & side per rakh dein.
Frying pan mein cooking oil,ajwain,zeera aur sabut dhania dal ker ache tarhan mix karein.
Adrak lehsan paste,haldi powder aur lal mirch powder dal ker ache tarhan mix ker lein.
Ab chopped daal mixture dal ker ache tarhan mix karein aur ek minute kliya paka lein & side per rakh dein.
Bowl mein maida,soji,namak aur ghee dal dein aur crumble hunay tak ache tarhan mix karein.
Thora thora ker ka pani shamil karein aur ghond ker dough tayyar ker lein aur dhak ker 25-30 minutes kliya rakh dein.
Haathon ko oil sa grease karein aur dough ko smooth hunay tak dubara ghond lein.
Chota dough lein (50g),ball bana lein aur haathon ki madad sa pheela lein.
Daal mixture ki small quantity (2 tsp) ko dough ka center mein dal dein aur edges ko gather ker lein,pinch aur seal ker ka ball bana lein,gently press karein aur rolling pin ki madad sa bail lein (makes 11-12).
Karahi mein cooking oil garam karein aur halki ancch per dono sides sa golden & crispy hunay tak fry ker lein aur frying kertay hoye gently press kertay rahein tak puri phool jaye.
Puris ko aam ras ka saath serve karein.
