Ingredients:
Prepare Puri/Papri:
- Maida (All-purpose flour) sifted 2 Cups
- Namak (Salt) 1 tsp or to taste
- Zeera (Cumin seeds) ½ tsp
- Ajwain (Carom seeds) ½ tsp
- Ghee 1 tbs
- Water ½ Cup or as required
- Cooking oil for frying
Prepare Lobia Chaat:
- Lal lobia (Red kidney beans) 1 Cup (boiled with salt)
- Aalo (Potato) cubes & boiled 1 large
- Cucumber deseeded & chopped 1 medium
- Pyaz (Onion) chopped 1 medium
- Hara dhania (Fresh coriander) chopped 2 tbs
- Zeera (Cumin seeds) roasted & crushed 1 tsp
- Lal mirch powder (Red chili powder) ½ tsp or to taste
- Namak (Salt) ½ tsp or to taste
- Chaat masala ½ tbs
Prepare Tangy Tamatar Chutney:
- Cooking oil 2 tbs
- Ajwain (Carom seeds) ½ tsp
- Hing (Asafoetida) ¼ tsp (optional)
- Curry patta (Curry leaves) 10-12
- Hari mirch (Green chilli) chopped 2
- Lehsan paste (Garlic paste) 1 tsp
- Tamatar (Tomatoes) pureed 1 & ½ Cup
- Lal mirch (Red chilli) crushed 1 tsp
- Namak (Salt) ¼ tsp or to taste
- Lemon juice 3-4 tbs
- Hara dhania (Fresh coriander) chopped 1-2 tbs
Assembling:
- Papri
- Dahi (Yogurt) whisked
- Chaat masala
- Lal mirch (Red chilli) crushed
- Hara dhania (Fresh coriander)
- Sev nimco as required
- Lemon juice
Directions:
Prepare Puri/Papri:
In a bowl,add all-purpose flour,salt,cumin seeds,carom seeds & mix well.
Add ghee & mix well until it crumbles.
Gradually add water & knead until dough is formed,cover & let it rest for 10 minutes.
Sprinkle dry flour and knead dough again.
Grease hands with oil and knead dough again until smooth,divide into 2 parts,take one part and sprinkle flour & roll out with the help of rolling pin.
With the help of 4-inch cutter size cut the dough into round shape & prick with form (makes 30-35).
In a wok,heat cooking oil & fry papri/puri on low flame until golden & crispy.
Prepare Lobia Chaat:
In a bowl,add red kidney beans,potatoes,cucumber,onion,fresh coriander,cumin seeds,red chilli powder,salt,chaat masala,mix well & set aside.
Prepare Tangy Tamatar Chutney:
In a frying pan,add cooking oil,carom seeds,asafoetida & mix well.
Add curry leaves & mix well.
Add green chillies & mix well.
Add garlic paste & mix well.
Add pureed tomatoes & mix well.
Add red chilli crushed,salt,lemon juice and fresh coriander,mix well & cook on medium flame for 5-6 minutes or until thickens.
Let it cool.
Assembling:
On papri,add lobia chaat,prepared tangy tamatar chutney,yogurt,sprinkle chaat masala,red chilli crushed,fresh coriander,sev,lemon juice & serve!

Bowl mein maida,namak,zeera aur ajwain dal ker ache tarhan mix ker lein.
Ghee dal ker crumble hunay tak ache tarhan mix karein.
Thora thora ker ka pani shamil karein aur ghond ker dough tayyar ker lein aur dhak ker 10 minutes kliya rakh dein.
Maida chirak dein aur dubara ghond lein.
Haathon ko oil sa grease karein aur smooth hunay tak dubara ghond lein,2 hisson mein divide karein,ek part lein aur maida chirak ker rolling pin ki madad sa bail lein.
Dough ko 4-inch cutter size ki madad sa round shape mein cut kr ka fork ki madad sa prick ker lein (makes 30-35).
Karahi mein cooking oil garam karein,papri/puri ko halki ancch per godlen & crispy hunay tak fry ker lein.
Prepare Lobia Chaat:
Bowl mein lal lobia,aalo.kheera,pyaz,hara dhania,zeera,lal mirch powder,namak aur chaat masala dal ker ache tarhan mix ker lein & side per rakh dein.
Prepare Tangy Tamatar Chutney:
Frying pan mein cooking oil.ajwain aur hing dal ker ache tarhan mix ker lein.
Curry patta dal ker ache tarhan mix karein.
Hari mirch dal ker ache tarhan mix ker lein.
Adrak lehsan paste dal ker ache tarhan mix ker lein.
Pureed tomatoes dal ker ache tarhan mix karein.
Lal mirch crushed,namak,lemon juice aur hara dhania dal ker ache tarhan mix karein aur darmiyani ancch per 5-6 minutes ya garha ho janay tak paka lein.
Thanda ker lein.
Assembling:
Papri per lobia chaat,tayyar tangy tamatar chutney,dahi,chaat masala,lal mirch crushed,hara dhania,sev aur lemon juice dal ker serve karein!
