Ingredients:
Prepare Bondi:
- Baisan (Gram flour) sifted 2 Cups
- Baking soda 1 pinch
- Water 1 Cup or as required
- Cooking oil 2 tsp
- Red food color few drops or as required
- Yellow food color few drops or as required
- Cooking oil for frying
- Sugar 1 & ½ Cup
- Water 3/4 Cup
Prepare Zafrani Kheer:
- Doodh (Milk) 1 liter
- Milk powder 2-3 tbs
- Mehran Zafran kheer mix 1 pack (155g)
- Akhrot (Walnuts)
- Pista (Pistachio) sliced
- Badam (Almonds) sliced
Directions
Prepare Bondi:
In a bowl,add gram flour,baking soda & mix well.
Gradually add water and whisk until smooth batter is formed.
Add cooking oil and whisk again.
Divide the batter into 2 equal portions.
Add red food color & yellow food color in each bowl respectively,whisk well & set aside.
In a wok,heat cooking oil,hold perforated spoon (a big round spoon with multiple small holes in it) and pour prepared batter on the spoon.Tap its edges so the droplets of batter fall in the cooking oil.
Fry on medium flame until crispy and repeat the same process with remaining batters.
In a wok,add sugar and water,mix well and cook until sugar is dissolved and syrup is thick.
Pour warm sugar syrup in both separated bowls and mix well,cover & let it rest for 4-5 hours.
Prepare Zafrani Kheer:
In a wok,add milk,milk powder,mix well & bring it to boil.
Add Zafran kheer mix,mix well and cook on medium flame for 10-12 minutes or until desired consistency & keep mixing in between.
Let it cool completely.
Assembling:
In serving glass,yellow bondi,zafran kheer,walnuts,pistachios,almonds,zafran kheer,red bondi and garnish with pistachios and almond.
Refrigerate until chilled & serve!

Thora thora ker ka pani shamil karein aur ache tarhan whisk ker ka smooth batter tayyar ker lein.
Cooking oil aur baking soda dal ker dubara whisk ker lein.
Batter ko do equal portions mein divide ker lein.
Ek,ek bowl mein red food color aur yellow food color dal ker ache tarhan whisk karein & side per rakh dein.
Karhai mein cooking oil garam karein aur perforated spoon per tayyar batter dal dein aur darmiyani ancch per crispy hunay tak fry ker lein.
Same yehe process baqi batters ka saath karein.
Karhai mein cheeni aur pani dal ker ache tarhan mix karein aur cheeni ghul janay aur sheera garha hunay tak paka lein.
Neem garam sheeray ko red aur yello bondi mein dal ker ache tarhan mix karein aur dhak ker 4-6 hours kliya chor dein.
Prepare Zafrani Kheer:
Karahi mein doodh aur milk powder dal ker ache tarhan karein aur ubal anay dein.
Zafran kheer mix dal ker ache tarhan mix karein aur darmiyani ancch per 10-12 minutes ya desired consistency anay tak paka lein aur bech bech mein chamcha chalatay rahein.
Thanda ker lein.
Assembling:
Serving glass mein yellow bondizafran kheer,akhrot,pista,badam,zafran kheer aur red bondi dal dein,pista aur badam sa garnish karein.
Refrigerator mein thanda ker ka serve karein!
