Ingredients:
Prepare Kheer (Rice Pudding):
- Ghee 2 tbs
- Hari elaichi (Green cardamom) 3-4
- Doodh (Milk) 1 & ½ litre
- Chawal (Rice) basmati ½ Cup (soaked for 15 minutes)
- Sugar ¾ Cup or to taste
- Badam (Almonds) crushed 2 tbs
- Pista (Pistachio) crushed 2 tbs
- Kishmish (Raisins) 2 tbs
- Qalaqand mithai crumbled 250g (substitute: Khoya 250g)
- Kewra water 1 tsp
- Chandi warq (Silver leaf)
- Dry nuts sliced
- Dried rose petals
Prepare Puri:
- Atta (Wheat flour) sifted 2 Cups
- Maida (All-purpose flour) sifted 1 Cup
- Sooji (Semolina) 2 tbs
- Namak (Salt) 1 & ½ tsp
- Ghee 2 tbs
- Water 1 & ½ Cup or as required
- Cooking oil for frying
Directions:
Prepare Kheer (Rice Pudding):
In a wok,add ghee & let it melt.
Add green cardamom & mix well.
Add milk,mix well & bring it to boil.
Add soaked rice,mix well and cook on medium low flame for 20-25 minutes (stir occasionally) and mash well with he help of masher.
Add sugar,mix well and cook for 1-2 minutes.
Add almonds,pistachios,raisins & mix well.
Add qalaqand mithai,mix well & cook on low flame for 2-3 minutes.
Add kewra water and mix well.
In a serving bowl,add prepared kheer and garnish with silver leaf,dry nuts & dried rose petal.
Refrigerate until chilled & serve!
Prepare Puri:
In a bowl,add wheat flour,all-purpose flour,semolina,salt & mix well.
Add ghee & mix well until it crumbles.
Gradually add water & knead until dough is formed,grease dough with ghee,cover & let it rest for 30 minutes.
Knead dough again until smooth and take out a small dough & make a ball.
Grease working surface with oil & roll out dough with the help of rolling pin then press & spread gently with hands (makes 12 puris).
In a wok,heat cooking oil and fry on medium high flame from both sides until golden & puffs up.
Serve puri with kheer!

Hari elaichi dal ker ache tarhan mix ker lein.
Doodh dal ker ache tarhan mix karein aur ubal anay dein.
Soaked chawal dal ker ache tarhan mix karein aur darmiyani halki ancch per 20-25 minutes kliya paka lein aur bech bech mein chamcha chalatay rahein phir masher ki madad sa ache tarhan mash ker lein.
Cheeni dal ker ache tarhan mix karein aur 1-2 minutes kliya paka lein.
Badam,pista aur kishmish dal ker ache tarhan mix karein.
Qalaqand mithai dal ker ache tarhan mix karein aur halki ancch per 2-3 minutes kliya paka lein.
Kewra water shamil karein aur ache tarhan mix ker lein.
Serving bowl mein tayyar kheer nikal lein aur chandi warq,dry nuts aur dried rose petal sa garnish ker lein.
Refrigerator mein thanda ker ka serve karein!
Prepare Puri:
Bowl mein atta,maida,sooji aur namak dal ker ache tarhan mix karein.
Ghee dal ker crumble hunay tak ache tarhan mix ker lein.
Thora thora ker ka pani shamil karein aur ghond ker dough tayyar ker lein,dough ko ghee sa grease karein aur dhak ker 30 minutes kliya rakh dein.
Dough ko smooth hunay tak ache tarhan ghond lein aur chota dough la ker ball bana lein.
Working surface ko oil sa grease karein aur dough ko rolling pin ki madad sa bail lein aur haath ki madad sa gently press ker ka pheela lein (makes 12 puris).
Karahi mein cooking oil garam karein aur darmiyani tez ancch per dono sides sa golden & puff hunay tak fry ker lein.
Puri ko kheer ka saath serve karein!
