In a bowl add meat, raw papaya paste, ginger garlic crushed, lemon juice, green chilies and mix well. Cover and rest for 30 minutes.
Add red chilli powder, cumin seeds, turmeric powder, coriander powder, black pepper crushed, garam masala powder, salt, chaat masala, yogurt and mix well. Cover and marinate for 6-8 hours or overnight in refrigerator.
On a girdle brush cooking oil, add marinated beef, cover and cook for 18-20 minutes on low flame.
Remove the lid and cook on high flame until water dries up (15 minutes).
Cover and cook on low flame for 20-25 minutes.
Now cook on high flame until oil separates (2-3 minutes).
Give coal smoke for 2 minutes.
Garnish with fresh coriander, lemon juice and serve.
Bowl may gosht, kacha papita paste, ginger garlic crushed, lemon juice, hari mirch daal kar achi tarah milayen or 30 minutes k liye marinate karen.
Ab lal mirch powder, zeera, haldipowder, dhania powder, kali mirch crushed, garam masala powder, namak, chaat masala or dahi daal kar achi tarah milayen. Dhak kar 6-8 ghantay ya overnight k liye fridge may rakh den.
Tawa par oil brush karen or marinated beef daal kar dhak den, 18-20 minutes tak low flame pe pakayen.
Ab lid remove kar k high flame pe pani khushk karen (15 minutes).
Dhak kar low flame pe 20 se 25 minutes tak pakayen.
Ab high flame par oil alag honay tak pkayen (2-3 minutes).
2 minutes tak charcoal ka dhuan den.
Hara dhania or lemon juice daal kar serve karen.
