Rub the mixture of raw papaya, ginger garlic paste and salt on mutton leg and leave for 40-45 min and set aside.
In a bowl add yogurt and all spice and mix well. Pour the marinating over the leg and rub it over well and leave for another 2-3 hours.
Place the leg in a large pan with oil (1/3 cup) and water (1 cup) in bottom and leave on very low flame for 2 hours almost. Keep flipping the sides so leg and masala shouldn’t get burnt.
Or Place the leg on greased baking tray, cover with foil and bake at 170 C for 1 ½ to 2 hours (may take ½ hour more) or till meat is fully done.
Serve Hot.
Ab is main papita aur adrak lehsun aur namak laga ke 40-45 min ke liye rakh dein.
Bowl main dahi aur saare masalae shamil karke mix karlein aur raan pea chi tarah mal dein.
Masale ko raan pe achi tarah laga ke 2-3 hrs ke liye chhor dein.
Raan ko bare pateela ya pan main ¼ cup oil aur 1 cup pani daal kar bilkul halki aanch pe rakh dein takreeban 2 hours ke liye. Thori thori der main sides palat dein takeraan aur masala jale nahi.
Leg ko greased baking tray pe rakh ke foil se cover karein aur phir 170 C pe 1 ½ 2 hours ke liye oven main rakh dein jab tak gosht gal na jaye (baking time 2 hours se zada bhi hosakta hai)
Garam serve karein.
