Ingredients:

  • Cooking oil 1 tbs
  • Pyaz (Onion) sliced 2 medium
  • Hari mirch (Green chillies) 4-5
  • Hara dhania (Fresh coriander) 1-2 tbs
  • Podina (Mint leaves) 1-2 tbs
  • Chicken 750g
  • Lemon juice 1 & ½ tbs
  • Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
  • Namak (Salt) 1 tsp or to taste
  • Kali mirch powder (Black pepper powder) 1 tsp
  • Kaju (Cashew nuts) 10-12 (soaked)
  • Badam (Almonds) 10-12 (soaked)
  • Pani (Water) 1-2 tbs
  • Cooking oil 6-8 tbs
  • Zeera (Cumin seeds) 1 tbs
  • Badi elaichi (Black cardamom) 1
  • Hari elaichi (Green cardamom) 3
  • Sabut kali mirch (Black pepper corns) 6-7
  • Badiyan ka phool (Star anise) 1
  • Darchini (Cinnamon stick) 1
  • Tez paat (Bay leaves) 2
  • Dahi (Yogurt) whisked 1 Cup (room temperature)
  • White korma masala 2 tbs
  • Jaifil powder (Nutmeg powder) 1/4 tsp
  • Javatri powder (Mace powder) 1/4 tsp
  • Kasuri meethi (Dried fenugreek leaves) ½ tbs
  • Cream ½ Cup (room temperature)
  • Garam masala powder 1 tsp
  • Chawal (Rice) 750g (soaked & boiled with salt until 3/4th done)
  • Pyaz (Onion) fried
  • White korma masala ½ tbs

Directions:

In wok,add cooking oil,onion,green chillies,fresh coriander,mint leaves and fry until light golden & let it cool.

In grinder,add onion & green chilli mixture,grind well & set aside.

In bowl,add chicken,lemon juice,ginger garlic paste,salt,black pepper powder and mix well,cover and marinate for 30 minutes.

In grinder,add cashew nuts,almonds,water,grind well & set aside.

In wok,add cooking oil,cumin seeds,black cardamom,green cardamom,black peppercorns,star anise, cinnamon stick,bay leaves and mix well.

Add grinded onion & green chilli mixture,mix well and cook for 2-3 minutes.

Add yogurt and mix well.

Add white korma masala,nutmeg powder,mace powder and mix well.

Add cashew & almond paste and mix well.

Now add marinated chicken and mix well,cover and cook on low flame for 8-10 minutes then cook on high flame until oil separates.

Add dried fenugreek leaves,cream and mix well.

Add garam masala powder,mix well & set aside.

In pot,add half quantity of boiled rice,prepared chicken korma,fried onion,remaining boiled rice,white korma masala,cover and steam cook on low flame for 8-10 minutes & serve!
