Ingredients:
- Hari mirch (Green chillies) 2-3
- Lehsan (Garlic) cloves 4-5
- Kacha papita (Raw papaya) 1/4 Cup
- Adrak (Ginger) 1 inch piece
- Lemon juice 1 & ½ tbs
- Mutton/Beef boneless cubes ½ kg
- Hari elaichi (Green cardamom) 3
- Badi elaichi (Black cardamom) 1
- Darchini (Cinnamon sticks) 2
- Laung (Cloves) 3-4
- Badiyan ka phool (Star anise) 1
- Sabut lal mirch (Button red chillies) 6-7
- Sabut dhania (Fresh coriander) ½ tbs
- Jaifil (Nutmeg) ½ piece
- Javatari (Mace) 3 blades
- Kala zeera (Caraway seeds) ½ tsp
- Sabut kali mirch (Black peppercorns) ½ tsp
- Zeera (Cumin seeds) 1 tsp
- Kashkhash (Poppy seeds) 1 & ½ tbs
- Pyaz (Onion) fried ½ Cup
- Lal mirch powder (Red chilli powder) ½ tbs or to taste
- Namak (Salt) 1 tsp or to taste
- Dahi (Yogurt) hung ½ Cup
- Sarsaon ka tel (Mustard oil) 2 tbs
Directions:
In chopper,add green chillies,garlic,raw papaya,ginger,lemon juice and chop well & set aside.
In bowl,add mutton/beef boneless cubes,grinded papaya mixture and mix well,cover and marinate for 30 minutes.
In frying pan,add green cardamom,black cardamom,cinnamon sticks,cloves,star anise,button red chillies,coriander seeds,nutmeg,mace,caraway seeds,black peppercorns,cumin seeds,poppy seeds and dry roast until fragrant.
Let it cool down.
In spice mixer,add roasted spices and grind to make a powder.
Add fried onion and blend well.
In marinated mutton/beef,add blended spices,red chili powder,salt,yogurt and mix well.
Add mustard oil and mix well,cover and marinate for 4-6 hours in refrigerator.
Thread marinated meat into skewers.
Put skewers on (burning charcoal) bbq grill and grill from all sides until done and basting with oil.

-Bowl mein mutton/beef boneless cubes aur grinded papaya mixture dal ker ache tarhan mix karein aur dhak ker 30 minutes kliya marinate ker lein.
-Frying pan mein hari elaichi,badi elaichi,darchini,laung,badiyan ka phool,sabut lal mirch,sabut dhania, jaifil,javatri,kala zeera,sabut kali mirch,zeera aur kashkhash dal dein aur khushbu anay tak dry roast ker lein.
-Thanda ker lein.
-Spice mixer mein roasted spices dal dein aur grind ker ka powder tayyar ker lein.
-Fried pyaz dal ker ache tarhan tarhan blend ker lein.
-Marinated mutton/beef mein blended spices,lal mirch powder,namak aur dahi dal ker ache tarhan mix ker lein.
-Sarson ka tel dal ker ache tarhan mix karein aur dhak ker 4-6 hours kliya refrigerator mein marinate ker lein.
-Marinated meat ko skewers per laga lein.
-Skewers ko (jaltay hoye koyla) bbq grill per tamam sides sa grill ker lein aur oil basting ker lein.
