Ingredients:
- Ghee 1/4 Cup
- Laung (Cloves) 3-4
- Darchini (Cinnamon sticks) 2
- Hari elaichi (Green cardamom) 3
- Sabut kali mirch (Black peppercorns) 10-11
- Zeera (Cumin seeds) 1 tsp
- Tez paat (Bay leaves) 2
- Pyaz (Onion) sliced 1 medium
- Mutton mix boti ½ kg
- Adrak lehsan paste (Ginger garlic paste) 1 tbs
- Hari mirch (Green chillies) paste 1 tbs
- Saunf (Fennel seeds) powder 1 tsp
- Dhania powder (Coriander powder) 1 tsp
- Namak (Salt) 1 tsp or to taste
- Pani (Water) 3 Cups or as required
- Chawal (Rice) basmati 2 Cups (soaked)
- Ghee 3-4 tbs
- Pyaz (Onion) sliced 1 medium
- Hari mirch (Green chillies) paste 1 tbs
- Dahi (Yogurt) whisked 3 tbs
- Kaju (Cashew nuts) paste 2 tbs
- Badam paste (Almonds paste) 2 tbs
- Garam masala powder ½ tsp
- Namak (Salt) 1 tsp or to taste
- Lemon juice ½ tbs
- Pani (Water) 1/4 Cup or as required
Dough:
- Khameer (Instant yeast) 1 & ½ tsp
- Cheeni (Sugar) 2 & ½ tsp
- Neem garam pani (Lukewarm water) ½ Cup
- Maida (All-purpose flour) sifted 3 Cups
- Namak (Salt) 1 & ½ tsp
- Cooking oil 1 tsp
- Pyaz (Onion) fried
- Doodh (Milk)
- Kalay til (Black sesame seeds)
Directions:
In pot,add ghee and let it melt.
Add cloves,cinnamon sticks,green cardamom,black peppercorns,cumin seeds,bay leaves and mix.
Add onion and fry until light golden.
Add mutton mix boti and mix well until changes color.
Add ginger garlic paste and mix well.
Add green chillies,fennel seeds powder,coriander powder,salt and mix well for 2 minutes.
Add water,mix well and bring it to boil,cover and cook on low flame for 1 hour or until meat is tender.
Take out cooked meat in a bowl & set aside.
In pot,add rice,mix well and bring it to boil,cook until water is reduced.
Cover and cook on low flame until 3/4th done & set aside.
In wok,add ghee and let it melt.
Add onion and fry until golden brown.
Add green chillies,yogurt and mix well.
Add cashew nuts paste,almond paste and mix well.
Add garam masala powder,salt,lemon juice,mix well and cook for 2-3 minutes.
Now add cooked meat and mix well.
Add water,mix well and cook on high flame until oil separates & set aside.
In bowl,add instant yeast,sugar,lukewarm water and mix well,let it rest for 10 minutes.
Add all-purpose flour and salt,mix well and knead until dough is formed.
Grease dough with oil,cover and let it rest for 50 minutes.
Add cooking oil and knead dough again.
Sprinkle flour and roll out with the help of rolling pin (18x18 inches) & fold.
In bowl,place folded dough and spread evenly.
Add cooked rice,cooked meat,fried onion,cooked rice and spread evenly.
Add fried onion and fold the edges to close and grease with oil then flip on baking tray (10x10 inches).
Apply milk on dough with the help of the brush and sprinkle black sesame seeds.
Bake in preheated oven at 180 C for 10-15 minutes.

Pyaz dal dein aur light golden hunay tak fry ker lein.
Mutton mix boti dal dein aur rang tabdeel hunay tak ache tarhan mix ker lein.
Adrak lehsan paste dal ker ache tarhan mix karein.
Hari mirch,saunf powder,dhania powder aur namak dal ker 2 minutes kliya ache tarhan mix ker lein.
Pani dal ker mix karein aur ubal anay ka bad dhak dein aur halki ancch per 1 hour ya gosht gul janay tak paka lein.
Cooked meat ko bowl mein nikal lein & side per rakh dein.
Pot mein chawal dal ker mix karein aur ubal anay ka bad pani reduced hunay tak paka lein.
Dhak dein aur halki ancch per 3/4th done hunay tak paka lein & side per rakh dein.
Karhai mein ghee dal ker melt karein.
Pyaz dal ker golden brown hunay tak fry ker lein.
Hari micrh aur dahi dal ker ache tarhan mix ker lein.
Kaju paste aur badam paste dal ker ache tarhan mix karein.
Garam masala powder,namak aur lemon juice dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
Ab cooked meat shamil karein aur ache tarhan mix ker lein.
Pani dal ker mix karein aur tez ancch per oil alag hunay tak paka lein & side per rakh dein.
Bowl mein khameer,cheeni aur neem garam pani dal ker ache tarhan mix karein aur 10 minutes kliya chor dein.
Maida aur namak dal ker ache tarhan mix karein aur ghond ker dough tayyar ker lein.
Dough ko oil sa grease karein aur dhak ker 50 minutes kliya chor dein.
Cooking oil dal ker dough ko dubara ghond lein.
Maida chirak dein aur rolling pin ki madad sa bail lein (18x18 inches) aur fold ker lein.
Bowl mein folded dough rakh ker evenly pheela lein.
Cooked chawal,cooked meat,fried pyaz aur cooked chawal dal ker evenly pheela lein.
Fried pyaz dal ker dough ka edges ko fold ker ka oil sa grease ker lein aur baking tray (10x10 inches) per flip ker lein.
Brush ki madad sa doodh laga lein aur kalay til chirak dein.
Preheated oven mein 180 C per 10-15 minutes kliya bake ker lein.
